Tasting Notes

Viticulture:

As one of the last varietals to ripen, these Cabernet grapes were allowed to develop in some of the best coastal and inland vineyards California has to offer. An abundance of sunshine and dry conditions optimized growing conditions and allowed the innate structure of the varietal to shine throughout this wine.

Immediately following picking and delivery, the grapes were crushed at optimal ripeness and fermented on the skins in temperature controlled stainless tanks. Sugar and temperature levels were monitored constantly and the fermenting must was pressed at precisely the point that required optimal tannin structure and flavor extraction. Ageing with French and American oak helped to round out the mouth-feel and left the wine to develop balanced oak notes.

Tasting Notes:

This cabernet has a nice ruby color and opens with lush aromas of dried cranberries, pomegranate, clove, and vanilla notes. It is medium bodied with firm tannins, a rounded mid-palate, and long finish complemented with flavors of plum and cinnamon.
