Tasting Notes

Vinification and maturation:

Manual picking to plastic bins during the second week of September. Prior to destemming the grapes pass through a conveyor belt to select the best grapes for fermentation . Fermentation occurred in stainless steel vats at 25ºC with a pre-maceration for two days. Maturation in new French oak barrels (80%) and American Oak barrels (20%) during 9 months. The wine was not stabilized before bottling and a slight natural
sedimentation can occur.

Tasting Notes:

Intense Ruby Colour with balsamic aroma, with hints of mint and berries showing a mineral and aromatic profile. In the mouth is full and balanced with well ripened tannins .The finishing is good and persistent.

Pairing:

Goes well with roasted lamb and other spiced meats, as well as strong cheeses.
