Tasting Notes

San Valentino is a certified organic property owned by the Mascarin family since 1990, and is centered on the hills of Rimini, near the sea. This fun frizzante of Bombino Bianco (aka Pagadebit) is from young vines in calcareous clays. It was native fermented in stainless, with the secondary ferment happening in bottle, where it remained for a short time prior to release, unfiltered. The sediment is obvious in the clear bottle, casting a haze through the pale yellow hue. Light and subtle, with gentle white florals, lemon, pear skin on a slight 11% palate, finishing with a saline wash. An easy, fun day drinker. 3000 bottles produced.
