Tasting NotesThis oxidative 50/50 blend of Chardonnay and Savagnin is from parcels in Château Gimon and Sous le Viaduc, in Montigny-les-Arsures, planted in grey marls. The Savagnin is aged sous voile in oak barrel for 4 years, while the Chardonnay was aged 4 years in foudres, topped up (ouillés). The components were blended and rested 3 months prior to bottling. |
